But there’s more: if you eat a spoonful of arequipe, you’re eating a bit of Latin American culture. It is called arequipe in Venezuela, Colombia, Peru and Ecuador. Only the Argentines call it dulche de leche.

Ingredients

  • 1 packet of whole milk powder (950 g)
  • 4 cups of water (1 liter)
  • 1 1/2 cups granulated sugar (or to taste) (300 g)
  • 1 tablespoon salt (15 g)
  • 2 tablespoons cinnamon (30 g)
  • 1 tablespoon baking soda (9 g)

Preparation

  • First, you need a stainless steel pan. The pan must be made of stainless steel, as this allows the caramelization to take place without burning on the bottom. If it sticks to the pan, it will make it difficult to make the recipe.
  • Now make the milk by combining the powdered milk with the water and whisking vigorously.
  • When you’re done, add the granulated sugar, then the baking soda, cinnamon and a pinch of salt. Mix well.
  • Keep in mind that you should never stop stirring. We want it to be thick without lumps and stirring is of great importance.
  • As for the heat, start on a medium heat.
  • You don’t have to follow the recipe literally, but you do have to keep stirring.
  • If you notice any lumps at any point during the process  , a good trick is to add a little cold water and keep stirring until they go away.
  • When your mixture is golden brown/caramel colored and starting to thicken, reduce the heat to the minimum. We’re almost done now.
  • Once it’s thick enough that you can see the bottom of the pan when you stir and you’re happy with the color and texture, remove it from the heat. Immediately transfer to another pan or bowl.
