Empanadas are delicious. Did you know that they are even one of the most popular snacks in the world? They are the Spanish variant of the British Cornish pasty or the Indian samosa, but many other countries also have their own versions.

The main secret is the dough. For example, they can be prepared with wheat flour or puff pastry. It all depends on what you like best. The same goes for the filling.

Empanadas normally contain ingredients that are incompatible with a vegan diet. For example, before going into the oven, they are usually topped with a beaten egg mixture to ensure better consistency, color and flavor.

This is why many people wonder if it is even possible to make vegan empanadas. Of course it is! Below we show two recipes for vegan empanadas, which are very easy to make yourself. Try them out!

The first recipe for vegan empanadas

Ingredients

For the dough

  • 125 grams of wheat flour
  • 80ml warm water
  • 3 tablespoons olive oil
  • 1 tablespoon baking powder
  • soy milk to spread over the dough
  • salt

For the filling

  • 75 grams of peas
  • 1 small onion
  • half a red bell pepper
  • 1 small zucchini
  • 1 clove of garlic
  • some celery
  • 1 teaspoon yeast
  • salt
  • pepper

Preparation

  • Boil the peas first.
  • Meanwhile, put all the ingredients for the dough in a bowl and knead well. Then cover the dough with plastic wrap and let it rest in the fridge for half an hour.
  • Then wash and cut the vegetables into small pieces (except the peas) and add a dash of olive oil, salt and pepper.
  • Fry all the vegetables in a skillet and add the peas until the onion is golden brown and absorbs the moisture.
  • Then remove the dough from the refrigerator and divide it into eight pieces.
  • Knead each piece and roll it out into a very thin circle.
  • Then place a tablespoon of vegetable filling on each dough circle and fold it in half. Be careful not to overfill the dough and seal each empanada tightly by pressing the edges with a fork. Otherwise, they will open during baking and the filling will leak out.
  • To seal them well and make them golden brown, brush them with soy milk.
  • Line a baking sheet with parchment paper so your empanadas don’t stick, then place them on it.
  • Bake your vegan empanadas in a preheated oven at 200°C for 20 minutes until golden brown. You can now enjoy your delicious homemade empanadas, both cold and warm.

The second recipe for vegan empanadas

Tip: You have to be very careful when filling the dough. Be careful not to overfill them so they don’t open during baking.

Ingredients

For the dough

  • 250 grams of flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 100 grams vegetable margarine
  • 1 tablespoon apple cider vinegar
  • 80 ml cold water

For the filling

  • 1 bag frozen spinach
  • 1/2 onion
  • 1 large clove of garlic
  • 2 tablespoons olive oil
  • salt

Preparation of the dough

  • First sift the flour and add the salt and sugar.
  • Mix these ingredients well, then add the margarine at room temperature and mix it with the flour.
  • Then slowly add the apple cider vinegar and water and knead continuously.
  • Keep kneading the whole mixture until you get a homogeneous dough.
  • Then cover the dough with plastic wrap and put it in the fridge for an hour.

Preparation of the filling

  • First wash and peel the vegetables.
  • Then finely chop the onion and garlic and fry them in a pan with olive oil.
  • Then add the spinach. If the spinach is frozen, thaw and wash well beforehand. Also, drain the spinach well to remove excess moisture.
  • Once you’ve added the spinach, stir it around a bit and put a lid on the pan.
  • Simmer for five to seven minutes, then remove from heat.

This is how you make the empanadas

  • First, remove the dough from the fridge and divide it into the amount of empanadas you will be making.
  • Then roll the dough pieces flat with a rolling pin, cut them into very thin circles, then add a tablespoon of filling.
  • Then seal the empanada tightly by following the same tips as in the recipe above.
  • Place a sheet of parchment paper on the baking sheet so that your empanadas don’t stick, then place them on top.
  • Bake in a preheated oven at 200°C for about 20 minutes.
